  • 4 cups Arugula
  • 1/2 cup Sun-Dried Tomatoes
  • 1/4 cup Olive Oil
  • 1/2 cup Walnuts
  • 1 cup Fennel
  • 8 oz Fresh Mozzarella
  • 1/2 cup Castelvetrano Olives
  • 1 cup Artichokes
  • 1/4 cup Pepperoncini
  • 1 each Lemon (zest and juice)
  • 2 cloves Garlic
  • 1 tbsp Honey
  • 2 tbsp Fresh Parsley
  • 2 tbsp Oregano

Instructions

  1. Cook farro according to package instructions until tender (about 25-30 minutes). Drain and let cool.
  2. While cooking, chop vegetables and prepare the dressing by combining lemon juice, zest, minced garlic, honey, parsley, oregano, and olive oil in a bowl.
  3. In a large bowl, combine cooked farro with arugula, sun-dried tomatoes, walnuts, fennel, mozzarella balls, olives, artichokes, and the dressing. Toss gently to mix.
  4. Refrigerate for at least 30 minutes before serving to enhance flavor.
